Anyone reading this thread and also has an issue with plug-in undo, I want to add on to the pile of strongly suggesting you shoot support an email addressing your complaints about it. They don't read forums, or "bitwish," etc. Just add onto the #'s of sending in a ticket to keep the issue an obvious priority over there at headquarters.
Like OP, I simply want an option to turn it off.
Firstly, it can just causes scenarios where you literally lose work. I'll give a quick example; I did a five minute take on keys, wanted to hear how it might sound quantized real quick, quantized it, played back, decided I'd rather hand nudge whatever notes rather than generic quantize the whole thing. The option to undo the quantize was gone, because a modulated plug-in somehow spammed my undo queue during the brief playback. The entire 5 minute take was ruined with quantize that I now couldn't undo.
The other thing is most plug-ins actually have their own undo system these days. The only thing a DAW wide plug-in undo offers is the luxury of not having to mouse and click on undo inside the plug-in.
What actually ends up happening even when a DAW wide plug-in undo isn't being buggy, is it actually places more stress and mental fatigue on the user having to keep track of so much more undo queue context while working. "Did I touch a plug-in parameter since that last edit operation I did that I want to now undo?" It literally interferes with DAW editing workflow.
Bitwig introducing DAW wide plug-in undo made me realize how well the separate plug-in undo that already exists in 90% of plug-ins makes so much more sense.
Plug-in undo is just one of those things you think about, sounds great in theory, but in actual practice it turns out to be a real pain in the ass. Like I said, even if it wasn't buggy, it interferes with core DAW operational workflow.
